A Winter Salad...
The colors and flavors in this salad are such a delight. Fresh pink grapefruit, roasted beets, and granny smith apples tossed in goat cheese, arugula, and toasted sunflower seeds. The juice from the grapefruit and the creaminess of the goat cheese create a dreamy dressing so all you need is a little salt and pepper and this salad dresses itself. It's rich, bright, and satisfying...it's truly the simple dishes that can be the most enjoyable.A Winter SaladIngredients:Serves 24 organic beets (I used two red and two orange)1 organic grapefruit, peeled + sliced (reserve residual juice)1 organic granny smith apple, sliced whole2 tablespoons organic goat cheese, freshly crumbled1 cup organic arugula1/4 cup organic sunflower seeds, toastedDirections:First, roast the beets. Peel four organic beets. Place on a baking sheet. Brush with olive oil. Season with salt + pepper. Roast for about an hour at 400 degrees or until tender. Let cool slightly then slice. Place all ingredients in a large bowl. Pour in residual juice from the grapefruit. Season with salt and pepper. Gently toss and serve.
