Fig + Strawberry Rose Hip Crumble
I love the simplicity of homemade fruit crumbles...and with summer berries peaking + figs popping up at the market, it's a great end-of-summer dessert. Perfect for any Labor Day shindig...happy baking!Makes 4 servingsIngredients:1 1/2 cups organic strawberries, quartered4 organic figs, quartered2 tablespoons dried organic rose hips1/4 cup organic sugar1/2 teaspoon organic cornstarch¼ cup + 1 tablespoon organic light brown sugar¼ cup organic all-purpose flour½ cup organic rolled oats1 teaspoon rose salt8 tablespoons organic unsalted butter cut into ½ inch cubesDirections:Preheat oven to 375 degrees. Butter four 5” ceramic dishes and place on a baking sheet. Gently mix strawberries + figs with sugar, cornstarch and rose hips. Add to ceramic dishes.To make the crumble topping:In a separate bowl, mix all other ingredients with your hands. Once well blended, place the crumble atop the fig + berry mixture.
