Passion Fruit Piña Colada

Passion Fruit Pina ColadaI love making an over the top tropical cocktail at least once every summer...and this one is for the books. Rimmed with a salty cinnamon sugar and garnished with slices of lime, this tropical delight will make you feel like you are on holiday, basking in the sun, breathing in the salty air...Passion Fruit Piña ColadaFor 2 cocktailsIngredients:1 cup organic pineapple, choppedJuice from 2 passion fruit1/2 cup organic coconut milk4 ounces rumHandful of iceOrganic passion fruit flowers + lime slices for garnishCinnamon Sugar + Rose Salt for rim (1 tablespoon organic sugar, 1/2 teaspoon cinnamon, 1 teaspoon rose salt)Passionfruit Pina ColadaDirections:Place sugar, cinnamon, and rose salt combination on a plate. Rim edges of two tumblers of your choice with lime juice from a wedge (I used these pretty glasses). Flip and coat with cinnamon/sugar/salt mixture. Place pineapple in a blender or food processor and blend until smooth. Add passion fruit juice and coconut milk and blend until combined. Strain through a fine mesh sieve into a large bowl using a rubber spatula. Pour into a cocktail shaker filled with ice. Add rum. Shake vigorously. Strain into each glass.
