TOAST
I have been on a fancy toast kick lately...with all of the fresh and colorful produce that gloriously arrives every summer, it's so much fun to layer a few simple ingredients onto a warm slice of homemade bread...it truly allows the ingredients to shine and is an amusing way to combine different flavors. So open up a bottle of rosé because it's time for a toast party!On the menu:Nectarine, Burrata, Basil + Maple SyrupBasil Butter, Cherry Tomato, Fried Egg + Micro GreensFig + Blueberry Jam, Swiss Cheese + Rose PetalsLet's start with whipped basil butter. Have you tried making whipped butters? If not, you are in for quite the rewarding culinary experience. Here's how you make it:Whipped Basil ButterSimply place 1/2 cup fresh, organic basil leaves in a food processor along with 1 cup unsalted organic butter (or raw butter) at room temperature. Blend for about 10-20 seconds. It's so delicious! You can also try my cherry butter recipe...Now on to the toasts. You can use a loaf of bread selected from your favorite local bakery or you can bake a loaf yourself. This basil boule is one of my favorites! Slice the entire loaf if you are having a gathering or just a few slices for yourself...toast each slice as you fancy...then...layer with your favorite ingredients or try some of mine:Nectarine, Burrata, Basil + Maple Syrup Spread burrata on each slice...layer with slices of yellow nectarine and basil leaves. Drizzle with warm organic maple syrup. Serve with a glass of iced coffee...Basil Butter, Cherry Tomato, Fried Egg, Micro GreensMake whipped basil butter (see above recipe). Slather on each slice. Layer with cherry tomatoes and a fried egg (I fried my egg in basil butter). Top with organic micro greens...Fig + Blueberry Jam, Swiss Cheese + Rose PetalsFirst, make homemade fig + blueberry jam or use your favorite jam...layer with swiss cheese and fresh, organic, edible rose petals...Recipe + Photography by Cassie Winslow
